Tea Shell and Cheese Muffins Made with Pancake Mix

These muffins are filled with green tea leaves and cheese after drinking.

Ingredients


7 pieces (5.9cm diameter x 4.5cm height mold)


CO-OP organic sencha green tea leaves from Shizuoka Prefecture – about 35g


(7 g of tea leaves is equivalent to 2 or 3 cups of tea made with 1 cup of hot water.)


7g tea leaves make 35g tea husks.


CO-OP pancake mix – 200g


Butter (salt free) – 50g


Processed cheese – 70g


Sugar: 20g


Egg: 1 egg


Milk: 1/2 cup


Instructions

  1. Put the butter in a heatproof container and heat in a microwave oven at 500W (600W) for about 40 seconds to melt it.
  2. Mix sugar, egg and milk in a bowl and add CO-OP pancake mix.
  3. When the mixture is no longer powdery, add butter and stir until smooth.
  4. Add the tea leaves to the mixture and mix until evenly combined. Put the mixture into the mold and mix until smooth.
  5. Put 1.5cm cubes of processed cheese on top.
  6. Bake in a preheated oven at 180℃ for about 20 minutes. (The dough should not stick to the skewer when it is pierced with a bamboo skewer).
