800 g jacket potatoes (boiled)


Salt and pepper


150 g grated cheese


1 red onion


50 g bacon cubes


150 g lamb’s lettuce


1 apple


150 g cherry tomatoes


2 tablespoons oil


1 tbsp balsamic vinegar


1 tsp mustard


1 tsp honey

Instructions

  1. Preheat the oven to 180°C top/bottom heat. Halve the potatoes and scoop out the insides with a small spoon. Season the insides with salt and pepper and mix with the cheese. Peel and dice the onion, fry the bacon in a pan without fat until crispy Fold both into the potato mixture.
  2. Fill the potato halves with the mixture and bake in the preheated oven for 20-25 minutes.
  3. In the meantime, clean the lettuce, wash it and shake it dry. Wash and dice the apple. Wash and halve the tomatoes. For the dressing, mix the oil, balsamic vinegar, mustard and honey. Season with salt and pepper. Mix the dressing with the salad.
  4. Remove the potato halves from the oven and serve with the salad.

Food Waste Tip

A perfect recipe for using up leftovers if you’ve cooked too many potatoes. If all of the filling doesn’t fit into the potatoes, you can also shape the rest into small patties and bake them on the baking tray.
