Preparation of vegetables: Slice the cucumbers and red onions into 0.5 cm slices. Mash the avocados (preferably ripe) with a fork.
Preparation of the sauce: Mix Alpro Cooking Soy with olive oil, lemon juice, basil, and avocados. Season to taste. Whisk until you obtain a smooth and slightly creamy consistency.
Prepare the portobello mushrooms: Remove the stems, keeping only the caps, and brush them clean. Smash both sides on a hot griddle, season and sprinkle with lemon juice while cooking.
Assembling the burger: Cut the burger buns in half and lightly toast them (brown the inside of each half in a frying pan or on a griddle) with a dash of olive oil. Spread a generous layer of beetroot hummus on the bottom half of each bun. Arrange the cucumber slices on top. Add a layer of the sauce prepared earlier. Finish with the mushrooms, sliced red onions, and a handful of arugula mixed with cilantro for freshness. Close the burgers with the other half of the bun and serve warm.
Prepare the sauce in large quantities and store it in the refrigerator. It can be used for other dishes such as salads or wraps, which prevents waste and saves you time for other meals.
