Instructions

  1. Season and cook the chicken: Season the chicken breast with 1.5 tsp of the Greek seasoning, then bake in the oven or grill in a pan until it reaches an internal temperature of 165°F. Let it rest for 5 minutes, then cut into a medium dice. (Food Waste Tip: This recipe is a great way to use up leftover roast chicken or Sunday trimmings—simply shred the cold meat and toss it in a hot pan with the seasoning to warm through).
  2. Prepare the fries: Cook up the McCain fries in an air fryer or oven according to the package directions.
  3. Prep the toppings: While the fries are cooking, dice all your vegetables and herbs (such as tomatoes, olives, and onions) and set aside. (Food Waste Tip: Loaded bowls are incredibly forgiving. Use this opportunity to clear out any slightly softening tomatoes, loose spring onions, or the final few olives sitting at the bottom of a jar).
  4. Build the base: Using 2 wide bowls, divide the hummus in half and spread it across the bottom of each bowl. Divide the cooked fries between the 2 bowls, mounding them in the centre.
  5. Assemble: Add the diced chicken, crumbled feta, and your prepared vegetables to the bowls.
  6. Garnish and serve: Finish with a generous drizzle of tzatziki, and garnish with fresh parsley and/or the remainder of the Greek seasoning for an extra punch of flavour. Enjoy!
