6 – 8 slices of bread, preferably day-old bread
100g smoked salmon
100g cream cheese
1 ripe avocado
1/2 lemon
1 tbsp extra virgin olive oil
A pinch of salt
This recipe is a great way to give slightly stale bread a second life: once toasted, it becomes perfectly crisp for crostini. If you have leftover bread, slice and freeze it so it is ready to toast whenever needed.
1. Cut the bread into slices approximately 1.5–2 cm thick. Toast in an air fryer at 170°C for 3-4 minutes, or until crisp and lightly golden.
2. Halve the avocado, remove the stone and scoop the flesh into a bowl. Mash with a fork, then add the lemon juice, olive oil and a small pinch of salt. Mix until creamy, leaving a little texture.
3. Spread a thin layer of cream cheese over each toasted slice of bread.
4. Spoon the avocado mixture over the cream cheese and finish with pieces of smoked salmon.
5. Serve immediately while the crostini are still crisp.
